Anti-cancer properties of carrots are greatly increased if the vegetable pre-boil the whole, say scientists at the University of Newcastle.
In the study, experts were able to determine that the carrot has the highest level of anticancer component falkarinola when cooked whole. According to their data, in uncut boiled vegetable is also higher concentration of substances, which give the sweetness of carrots fresh.
Advantages falkarinola were identified by these scientists a few years ago. The likelihood of tumors in mice was reduced by one third after they were fed raw carrots, or given the drug in its pure form.
However, some scholars of the scientific organization of charity Cancer Research UK are skeptical about such a discovery, and believe that the most effective means to fight cancer - a balanced diet, rich in a variety of fruits and vegetables, but not one vegetable or one of any dish that can not able to provide such a protective effect, says the BBC.
